Happy July 4th!!!

Happy 4th, everyone! Just wanted to say ‘hi!’ I haven’t posted anything for a few days. Here are some photos from my day:

 This sno cone was FAB!
Not as fab as this strawberry shortcake, though! 🙂

 Glow sticks before fireworks!

I’ll admit it: whenever I see or hear fireworks, I always sing, “Baby you’re a firework!” in my head. Whoops. Sorry if it’s now stuck in your head!

Uncle Sam! I could never walk on stilts, by the way! *insert laughing face emoji*

Those are just a few pics from today! I hope you all had an extra awesome day and ate tons of yummy food! 😛

Happy 4th!!!!

Last Day of School

Hey everyone! Happy Thursday!

Yesterday was my last day of 7th grade. My friends and I had a campout in my friend Megan’s backyard. We’d been planning it for a few months, and were so, so excited! (I was mostly excited about the s’mores 🙂 ha ha)

Let me just say that yesterday at school was kind of a drag… but we all knew the end of the day would be the best part! I am very glad I got to spend it with my some of my best friends!

I didn’t take pictures of every little thing. We took photos of ourselves mostly, and I took a bunch of pics of the sparklers, which turned out great! Here are some photos:

Vegan Strawberry Rhubarb Hemp Seed Crisp

Happy Saturday, everyone! I love strawberry rhubarb pie SO much! So, my mom and I went shopping for ingredients to make a crisp. She is vegan, so we did make it vegan. I don’t think there’s a difference, other than no dairy! It tastes just as good! DSC_0031 Recipe:  Preheat oven to 350 degrees. Grease an 8×8 inch square baking pan with vegan butter. Filling: In a large bowl, mix together: 3 cups hulled and quartered strawberries 1 large stalk of rhubarb sliced into one inch pieces 2 teaspoons corn starch 1/2 cup white sugar 1 teaspoon vanilla extract 1/4 teaspoon cinnamon 1 pinch of sea salt into the greased pan.

DSC_0008 Topping: In a separate bowl, mix together: 1 cup unbleached flour 3/4 cup rolled oats 1/2 cup white sugar 1/2 cup brown sugar 1 teaspoon cinnamon 1 teaspoon baking powder 1/4 cup hemp seeds (Optional, but if you’re looking for extra protein, i would recommend this!) 1/4 teaspoon sea salt into a bowl. DSC_0019DSC_0026 Once mixed, add 1/2 cup vegan butter into ingredients, and mix until crumbly. Sprinkle topping loosely over filling, covering the mixture. Bake at 350 degrees for 40-45 minutes, until fruit is soft and topping is light brown. Enjoy!!

Five Great Summer Reads

Summer is the best time for reading! Here are my summertime reads:

1. Yes Please by Amy Poehler

Amy Poehler is a phenomenal actress, comedian, feminist, and inspiration for all women. Whoever she plays on-screen she always makes that character a lovable one. (example: Leslie Knope) This autobiography is one of the funniest. It’s filled with childhood stories as well as how she got to where she is today. This is a must-read for anyone who loves a good laugh!

2. Wildwood by Colin Meloy, illustrations by Carson Ellis

I read wildwood a few months ago. It’s a big book (a bit more than 500 pages i believe), but it sure is a page turner!  basically it’s about a young girl named prue whose brother gets taken into the ‘Impassable Wilderness’ by a flock of crows. The story revolves around her in the ‘impassable wilderness,’ and it’s filled with fantasy creatures and people. I believe there is a second and third book as well, and I’d love to read those! The illustrations make the book come alive, though. Carson Ellis is an amazing illustrator and she’s done drawings for the book ‘The Mysterious Benedict Society’ (which is also a great read!) Ps, thank you to my aunt who purchased this book for me!

3. Wild by Cheryl Strayed

I read wild last year. I was drawn to the cover! LOL! I love that shoe. This book is about a women who wants to ‘escape’ her life after her mother dies. Unexperienced, she walks the 2,650 mile hike on the Pacific Crest Trail–alone. The story revolves around her going through tough times and documented adventures through the trail. You could read this book in less than a week. Every page leaves you wondering what will happen next! Oh, and the movie recently came out starring Reese Witherspoon whom I adore! I haven’t seen the movie yet, but I’m sure it was great! Not as good as the book though! 😉

4. All the Bright Places by Jennifer Nivin

This was the last book I read. let me tell you, it’s one of the best books I have ever read in my life! Jt’s definitely this years ‘The Fault in Our Stars.’ Plus, a movie is coming out in 2017! It’s all about a depressed boy named Theodore (or as others call him ‘Finch’) who meets a girl named Violet who hasn’t been herself since her sister Eleanor died. They go wandering on adventures for school, and eventually start to fall in love. It’s a beautiful story, which Niven expresses  perfectly!

5. It by Alexa Chung

Alexa Chung–a worldwide fashion icon. In this book, she shares some of her fashion secrets and her personal style icons. She is definitely one of my  inspirations. When I first discovered her I was captivised by her hair (haha) and it inspired me to get a short haircut too! Any fashion-guru will enjoy this!

Have a great day! xoxo, Josie
