Making Scallion Pancakes!

The other day, my mom and I tried Cook’s Illustrated’s scallion pancake recipe. (Thanks to my aunt for the subscription!!) I had tried scallion pancakes a couple years ago and LOVED them so much. So, when I saw the recipe, I knew I had to try it!

Since the recipe was in a magazine, I’m not going to tell you every step. Instead, I’ll just share a couple photos and what’s happening in each one. You can find the recipe here or in the newest magazine.

Skip to the bottom if ya wanna hear about my experience with them!

OK. So now I’ll tell you about my experience with the whole process!

Out of all the recipes I’ve tried, this was definitely one of the more complicated ones!
The final product was certainly delicious, but we thought we should’ve rolled the dough out more because they were a lot thicker and doughier than they should have been. BUT, I would 100% try again to perfect, or at least make ’em better than last time! They were super delicious, and the sauce was really easy to make!

Next time we make these, I’ll share photos and if anything’s changed.

On second note, I start high school in TEN DAYS. WHAT! I do not wanna go back to school… I know everyone says this, but summer went by so fast! I’ll keep you guys updated on my high school ‘experience!’ Hopefully, I’ll still have this blog by the time I graduate and go to college! 🙂

Happy Sunday! Have a great week!

Summer Salad!

Happy Thursday, everyone! Can you believe that today is the last day of June?! It’s hard to believe. Anyways, I wanted to post a summer-themed recipe and one that would be perfect for the Fourth of July, so I created this one! It’s super easy and super delicious. This salad is also very customizable, so you can replace anything or take anything out if desired! The recipe is down after the pictures.

Ingredients:
Spinach
Quinoa
Fruit, I used blackberries and strawberries
Walnuts or almonds
Dressing, I used Newman’s Own Raspberry Walnut
Feta cheese

Recipe:

1. Prepare the quinoa. It should have directions on the back of the container, so it all depends on the type you used.
2. While the quinoa is cooking, cut the strawberries to whatever size you want. I cut them into fourths. Then I cut the blackberries which I have never done before, but it was actually easy and it made more!
3. Put the spinach into bowls, and fill it with your toppings.
4. The quinoa will be very hot when it is done, so let it cool by putting it in the fridge for an hour or more.
5. Add the quinoa to the salad and then the dressing.

Ta-daaaa! How easy was that?! If you try the recipe, post a picture and tag me with the hashtag #StudioJosieEats!

Super Easy Blueberry Smoothie Bowl

Hello, everyone! I don’t have school today so – after I slept till’ 11-o’clock :0 – I decided to make a smoothie bowl! I’ve been making them a lot lately but never did a post on them. (I did make an Acai Bowl one a little while back, though.)

I kinda made this recipe up myself, but its literally two ingredients and your choice of toppings!

Here are the ingredients:

-1 cup of milk of your choice
-1 cup frozen blueberrries
-(optional) 1 tbs maple syrup or honey for sweetening

And that’s it! Blend the ingredients together. I like my smoothie bowls thicker, but its up to you how thin or thick you want it. As for the toppings, I used:

-Kiwi
-Granola
-Honey
-Blueberries

But some other options are:

-coconut
-chia/flax seed
-almonds or other nuts
-other fruits
-anything you want!

Don’t forget to make it look pretty! That’s my favorite part :).

Happy Wednesday!

Vegan Ginger Chocolate Chunk Scones

DSC_0220.JPG

Hi everyone! Happy Sunday! This morning I made some DELICIOUS Vegan Ginger Chocolate Chunk Scones. My mom and I found the recipe on Post Punk Kitchen. They have a ton of great vegan recipes.

Since I didn’t write the recipe, I’m just going to link it:

HERE!

I’m going to share my experience and photos with you.

So, first things first, the ingredients. I used all the ingredients the recipe called for, except for allspice. We didn’t have any, so instead we used a few dashes of cloves. In the recipe, they used a vegan chocolate bar, we just used mini vegan chocolate chips! Chocolate is chocolate, after all!

I mixed all of the dry ingredients first:

Then added all of the wet ingredients to it:

After that, it started to get really doughy, so I used my hands. It sort of felt like pizza dough. I added in the chocolate chips:

And then they were ready to go onto the baking sheet! Instead of greasing the pan I just used parchment paper, and I scooped the batter into a 1/4 cup. Then I added some turbinado sugar (which is in the batter already) to the top of the scones! Here they are all ready for the oven:

They were in the oven for 15 minutes, so I didn’t have to wait too long 🙂 Here is the finished product:

I seriously would recommend trying this recipe. They turned out so, so yummy! They aren’t too crunchy and the middle is soft. It’s the perfect blend of ginger and chocolate. Plus – it’s a super quick recipe! (By the way – it made 13 in total) Go check it out!

Have a great day!

Homemade Acai Bowl

IMG_1504

Hi everyone! Happy Wednesday! Today I have a special recipe which I have been dying to do for quite a while… ACAI BOWLS! You’ve probably seen pictures of them before, I first discovered them on Pinterest. But let me tell you, not only do they look delicious, they taste even better!! So here is my recipe for them!

Ingredients:
-one pack frozen acai
-one pack of yogurt (see pic below)
-one cup of milk (almond, soy, regular, any kind will work.)
-frozen blueberries (you may also use frozen bananas. They make it a bit thicker. You could even use both!)
-toppings, I used raspberries, almonds, granola, shredded coconut, pumpkin seeds, and hemp seeds. But you may use anything you’d like!

Recipe: Blend together the following items:
